The main season for growing courgettes (called zucchini in Italy and America) in the UK is between the months of June and October.

Thought to have been developed from Squash – which have been cultivated in Central America for more than five thousand years – courgettes were not widely eaten in Europe before the twentieth century, and have only brought to the attention of Britons during the last 50 or so years.

The courgette is a versatile ingredient. Wash and dry. Slice into 1 cm / ˝ inch slices. Steam for 3-4 minutes or sauté until just soft. Use raw in salads.

Courgettes have a high water content and are low in calories. They are a source of folate, are rich in potassium, as well as in vitamins A and C.

Up to a week in a paper bag in the fridge – less if they are already cut or bruised.
