Mange tout (French for eat (mange) all (tout) - eat it all - are a summer crop – harvested between the months of June and September in the UK.
Mange tout are immature pea pods which are eaten whole (sugar snap peas are slightly more mature & can be eaten as mange tout - or as peas separately). They are delicious and sweet. Peas are a type of legume - in other words a vegetable that grows in a pod, like runner beans or chick peas.
Dried peas have been found in Ancient Egyptian tombs, though it's believed that the fresh, green varieties weren't cultivated until the 17th Century.
Mange tout – and peas in general - are a good source of protein. A cup of them contains more protein than a whole egg, yet they're much lower in fat.
It's important to keep peas refrigerated after picking, or their sugar content turns to starch and they lose their flavour. They will keep in the fridge for 2-3 days. Mange tout freeze well (boil for 1 minute and drain well before freezing).
Whenever possible we will source out pease from local North Devon producers. We will also source from other South-West markets in times of high demand.
